ENTREES

Turkeys
Remove turkey from refrigerator and allow to sit at room temperature for one hour.

In the bottom of a roasting pan, pour one cup of stock, water or white wine. Place turkey on wire rack in the roasting pan, or create a rack by placing turkey on a bed of coarsely chopped root vegetables. Cover tightly with foil and bake at 350° - 1.5 hours for a medium turkey (9-12 lbs) - add an additional 5 minutes per pound cooking time, for a large turkey (13-17 lbs).

Remove foil and continue to bake an additional 15 minutes to brown and crisp the skin. Let rest for 10 minutes before carving. Internal temperature should be 165°

Allow rib to rest for 15 minutes before slicing. Internal temperature should be between 130° for medium rare and 160° for well done.

Mashed Potatoes
Place potatoes in an uncovered baking dish. Heat at 350° for 20 minutes or until hot. Or warm mashed potatoes on the stovetop over low heat, stirring often.

Sweet Potato Casserole
Place yams and sweet potatoes in an uncovered baking dish. Heat at 350° for 10-15 minutes, or until hot.
